Ingredients
  

8 oz whole wheat pasta (fusilli or penne)

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1/2 cup red onion, finely chopped

1 cup corn (fresh or frozen)

1/4 cup fresh cilantro, chopped

1 lime, juiced

2 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Optional: 1/4 cup crumbled feta cheese

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.

    Prepare the Dressing: In a small bowl, whisk together the lime juice, olive oil, garlic powder, salt, and pepper. Adjust seasoning to taste.

      Combine Ingredients: In a large mixing bowl, add the cooled pasta, diced avocados, cherry tomatoes, red onion, corn, and cilantro. Gently toss to combine the ingredients.

        Add Dressing: Pour the dressing over the pasta mixture and toss until everything is well coated.

          Optional Feta: If using, sprinkle the crumbled feta cheese over the top and gently fold it in.

            Chill and Serve: Allow the salad to chill in the refrigerator for about 30 minutes to let the flavors meld. Serve fresh as a delightful side or a light main dish.
