Avocado Brownies

A delightful twist on a classic dish.

Ingredients
  

1 ripe avocado, mashed (about 1/2 cup)

1/2 cup unsweetened cocoa powder

1/2 cup almond flour (or whole wheat flour)

1/3 cup maple syrup (or honey)

1/4 cup coconut sugar (or brown sugar)

1/4 cup melted coconut oil (or unsalted butter)

1 tsp pure vanilla extract

1/2 tsp baking powder

1/4 tsp salt

1/2 cup dark chocolate chips (dairy-free if needed)

Instructions
 

Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.

    In a mixing bowl, combine the mashed avocado, melted coconut oil, maple syrup, and vanilla extract. Mix well until smooth.

      In a separate bowl, whisk together the cocoa powder, almond flour, baking powder, coconut sugar, and salt until evenly mixed.

        Gradually add the dry ingredients to the avocado mixture, stirring until combined. The batter will be thick.

          Fold in the dark chocolate chips until evenly distributed throughout the batter.

            Pour the brownie batter into the prepared baking pan and spread it out evenly with a spatula.

              Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out mostly clean (a few moist crumbs are okay).

                Once baked, remove from the oven and let the brownies cool in the pan for about 10 minutes before lifting them out using the parchment paper.

                  Allow the brownies to cool completely on a wire rack before cutting them into squares. Enjoy!
