Apple Cider Glazed Pork Chops

4 bone-in pork chops (about 1 inch thick)

Salt and black pepper to taste

2 tablespoons olive oil

1 cup apple cider

2 tablespoons apple cider vinegar

2 tablespoons brown sugar

1 teaspoon Dijon mustard

1 teaspoon thyme (fresh or dried)

1 teaspoon garlic powder

1/2 teaspoon cinnamon

1 tablespoon butter

Fresh thyme sprigs for garnish (optional)

Prepare the Pork Chops: Season both sides of the pork chops generously with salt and black pepper. Let them sit at room temperature for about 15-20 minutes.

    Make the Glaze: In a small saucepan, combine the apple cider, apple cider vinegar, brown sugar, Dijon mustard, thyme, garlic powder, and cinnamon. Bring to a simmer over medium heat. Allow it to simmer for about 10-15 minutes, or until it reduces by half and thickens slightly. Remove from heat and stir in the butter until melted. Set aside.

      Sear the Pork Chops: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the pork chops and sear for about 4-5 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 145°F).

        Glaze the Chops: Reduce heat to medium-low. Pour the apple cider glaze over the seared pork chops in the skillet. Cook for an additional 2-3 minutes, turning the chops occasionally to coat them evenly in the glaze.

          Serve: Once the pork chops are nicely glazed, remove them from the skillet and let them rest for a few minutes. Serve warm, drizzled with extra glaze, and garnish with fresh thyme sprigs if desired.
