Ingredients

1 lb (450g) boneless chicken thighs (cut into bite-sized pieces)

1 cup orange marmalade

2 tablespoons soy sauce

Instructions

Prepare the Sauce: In a medium-sized mixing bowl, combine the orange marmalade and soy sauce. Stir well until the marmalade is fully dissolved into the soy sauce, creating a cohesive glaze.

Cook the Chicken: In a large skillet or non-stick pan, heat a little oil over medium-high heat. Once hot, add the bite-sized chicken pieces. Sauté for about 5-7 minutes or until the chicken is browned and cooked through.

Glaze the Chicken: Lower the heat to medium and pour the orange marmalade mixture over the sautéed chicken. Stir well to coat the chicken evenly. Cook for an additional 3-5 minutes, allowing the glaze to thicken and stick to the chicken, stirring occasionally.

Serve: Once the chicken is thoroughly coated in the sweet and sticky orange glaze, remove from heat. Serve hot over rice or noodles, garnished with sesame seeds or chopped green onions if desired.
